Southwestern eggs + black beans

This is a textbook example of a meal idea that started out grandly, turned out to look pretty boring, but tasted delicious despite its humble plating. I cheated and used Southwestern Eggbeaters (we all fall sometimes), and then I heated up black beans with a few jalapenos and some juice from the jar, toasted tortillas, and served it all up with a little shredded cheddar on top. I started making this meal with the intention of using an avocado I had, but alas, I was too late to save that poor soul... nonetheless, it was a good, easy breakfast that got us through the morning.
